Chicken and butternut squash
Ingredients
- 1tbsp Olive oil
- 50g Onion, finely chopped
- 300g Butternut squash, peeled and diced
- 125ml Very low salt chicken stock
- 100g Chicken breast, diced
Step 1: Begin by heating olive oil in a saucepan, then sauté the onion until it becomes soft and translucent.
Step 2: Next, introduce the chicken to the saucepan and cook it until it develops a rich, golden-brown color. This should take approximately 5 minutes.
Step 3: After browning the chicken, incorporate the butternut squash into the pan. Pour in the stock, cover the saucepan, and let it simmer for 12-15 minutes, allowing all the flavors to meld together.
Step 4: Once the cooking process is complete, you have two options to achieve your desired consistency. You can either use a blender to create a smooth texture or use a masher to achieve a coarser consistency.
